Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 cup ricotta cheese
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper
In a bowl, whisk together the flour, baking powder, and salt
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, and then mix in the ricotta cheese
Add the fresh lemon juice, lemon zest, and vanilla extract; mix until well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Drop spoonfuls of dough onto the prepared baking sheets
Bake in the preheated oven for about 12-15 minutes, or until the cookies are set and the edges are lightly golden
Let the cookies cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely
Once cooled, dust the cookies with powdered sugar
