Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can 14 oz diced tomatoes
- 1 cup diced carrots
- 1 cup diced potatoes
- 1/2 cup diced celery
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen corn
- 1 cup frozen green beans
- 1/4 cup ketchup
- 1/4 cup Worcestershire sauce
- 1/4 cup chopped fresh parsley
- 1 cup shredded cheddar cheese optional
Instructions:
Set the ground beef in a large pot over medium-high heat and break it up as it cooks
Cut up the onion and garlic and add them to the pot
Let the onion cook until it's soft and clear
Boil the potatoes, carrots, celery, dried oregano and basil, salt, and black pepper
Then add the beef broth and mix everything together
Once the soup starts to boil, lower the heat and let it cook slowly for 20 minutes, or until the vegetables are soft
Put in the frozen green beans and corn, and let the soup cook for another 5 to 10 minutes, or until everything is hot
Add the Worcestershire sauce and ketchup and mix them in
Test the seasoning and make any necessary changes
Just before you serve the soup, sprinkle it with chopped fresh parsley
If you want, you can add shredded cheddar cheese to the top of each serving
Enjoy while hot!
